Food microbiology and DNA
Safety and quality of foodstuff are really important in a moment in which frauds and sophistications are reaching high numbers. Microbiological testing could be performed in order to verify toxins presence or to implement HACCP system.
Microbiologial testing can be performed onto food or onto food processing environments and they aim to research microorganisms (bacteria, mold, yeast) as markers of bad or good hygienic conditions, but also to quantificate microorganisms that could damage human health.
The main parameters are: total viable count (mesophilic bacteria), fungi (yeasts and molds), Coliforms Enterobacteriaceae, Escherichia coli, faecal streptococci, pathogenic bacteria, Salmonella spp., Listeria spp., Coagulase positive Staphylococci.
All the methodologies are in compliance with the official technical standard and the tests were accredited by Accredia according to the EU standard UNI CEI EN ISO/IEC 17025.
Every workplace has to be always monitored and controlled in order to grant suitable sanitation conditions and in order to be in compliance with national regulations concerning food self-monitoring and the HACCP. The results from swab tests is decisive in the evaluation of some disinfection products and in the identification of some corrective actions.
Swabs have to be checked every 6 months at least.

Qualitative tests: fast determination of GMO by qualitative methods. Every genetic test is able to distinguish the genetic sequence and every sequence can be verified with suitable technique (e.g. restriction enzyme test, hybridation and DNA sequence test). A qualitative results clearly shows the presence or absence of the tested GMO. We are able to evaluate the presence of DNA stranger than that labelled or the presence of pork DNA according to Halal protocols.
Quantitative tests: they are used in order to determine the quantity of GMO DNA present in a certain sample. We performed this tests by using PCR and by applying strict controls in order to delete false positive and negative. These tests are usually performed after having detect GMO positive samples in the qualitative tests; they could be also performed as main test if required.
